Chef Chalee Kader, from 100 Mahaseth, showcasing ‘Nose-to-Tail’ Isan dishes

SIWILAI CITY CLUB, introduces a new Kitchen Takeover Collaboration Specials creating unique culinary experiences for everyone to enjoy. For the inaugural Kitchen Takeover Collaboration, SIWILAI CITY CLUB is honoured to have talented Thai chef, Chalee Kader, Executive Chef at 100 Mahaseth which is a ‘Nose-to-Tail’ restaurant with Southeast Asian influences and has been awarded a Michelin Bib Gourmand Award for 2019. “S.C-C Kitchen Takeover Collaboration Series: 100 Mahaseth by Chef Chalee Kader” offers diners a taste of Nose-to-Tail eating for one special night on Thursday 24th January 2019 from 6pm.
Chef Chalee Kader will be presenting a special 6-course set dinner which includes plara chips with larb of grilled catfish & dill flowers, fried crispy tripe with fermented fish relish, rice field weeds & a coriander salad, fermented rice noodles with cured pork jowl, charcoal roasted bone marrow with perilla seeds & lemongrass, fermented pork ribs with gingerpurée, oxtail & cassia leaf curry, goat ribs marinated in fish sauce with a chimichurri of Isan herbal served with rice, all finished off with the delicious Banana, Banana and Banana dessert.
For this year’s first SIWILAI CITY CLUB Kitchen Takeover Collaboration Specials, Chef Chalee’s menu is inspired by the Isan way of life; with the people in that region teaching him to waste nothing and use the produce that nature offers at that time of year. He has gathered local ingredients for his menu, allowing diners to experience a true style of Isan food, which blend perfectly with the venue’s relaxing atmosphere and live music on offer.
